18 Virginia Peanut Pie December 2016

Peanut Pie

3 eggs, beaten slightly

1 c. Karo dark corn syrup

1 c. sugar

2 T. butter, melted

1 tsp. vanilla

1/8 tsp. salt

1 1/2 c. peanuts, dry roasted, no salt

  1. In a medium saucepan, combine the sugar, corn syrup, and butter. Whisk to blend.  Bring to a full boil, and remove from heat.
  2. In a large bowl, beat eggs until frothy. Gradually beat in cooked syrup mixture. Stir in salt, vanilla, and peanuts. Pour into pie shell.
  3. Bake in preheated 350 degree oven for 45 to 50 minutes, or until filling is set.
