Pan Fried Rainbow Trout

4 Virginia Rainbow Trout, head off, gutted and split

1 ½ pastry or cake flour

2 Tablespoons cornstarch

Salt and pepper

2 ounces vegetable oil.

 

Combine the flour, cornstarch and the salt and pepper, mixing well.

Dredge the fish in the seasoned flour mixture.

Heat the vegetable oil in a skillet

Fry the fish with the cut side down first. Serve with Green Tomato Chutney
