3 eggs, beaten slightly
1 c. Karo dark corn syrup
1 c. sugar
2 T. butter, melted
1 tsp. vanilla
1/8 tsp. salt
1 1/2 c. peanuts, dry roasted, no salt
- In a medium saucepan, combine the sugar, corn syrup, and butter. Whisk to blend. Bring to a full boil, and remove from heat.
- In a large bowl, beat eggs until frothy. Gradually beat in cooked syrup mixture. Stir in salt, vanilla, and peanuts. Pour into pie shell.
- Bake in preheated 350 degree oven for 45 to 50 minutes, or until filling is set.
