1 pound fresh asparagus
¼ cup vegetable oil
2 Tablespoons coarse salt,
Sea salt is good in a recipe with this few ingredients. Celtic Sea Salt or Grey Salt is very nice with asparagus.
Freshly ground black pepper
Preheat the oven to 400 degrees F.
Trim the stalks at the point where the skin thickens. If the spears are thick consider peeling them. In a bowl or shallow pan toss the spears with the oil. Arrange them in a single layer on a baking sheet and sprinkle them with the salt and pepper. Bake them for about 25 minutes, (a minute or two more or less depending on the thickness. They should still be crisp, but tender when you bite them.
