Rosa Parks Peanut Butter Pancakes
1 cup flour
2 tablespoons baking powder
1/2 teaspoon salt
2 tablespoons sugar
1 1/4 cup milk
1/3 cup peanut butter
1 tablespoon shortening, melted
Sift together dry ingredients (flour, baking powder, salt, sugar). In a separate bowl, whisk egg before combining remaining “wet” ingredients (milk, peanut butter, shortening). Now, combine the wet and dry ingredients together. Stir to blend.
Melt shortning on griddle. Drop batter on the griddle 2 ounces at a time and cook at medium-high heat (275 degrees) until set and golden on one side. (@ 2 minutes) flip the pancakes over and cook another 2 or 3 minutes until the cakes are puffed and the bottom is golden brown.
