Pork and apple meatballs
Serves 4
Ingredients
1 pound Ground pork
½ cup Mushrooms, chopped
1/2 cup shredded carrots
1/3 cup diced onion
2 tablespoons minced garlic
2 tablespoons soy sauce
1 egg white
½ cup applesauce or 1 cup peeled grated apple
½ cup Hoisin sauce divided
2 ounces white wine
Soba noodles, cooked.
Procedure
Saute mushrooms, onions, and garlic in a pan lightly coated with vegetable oil.
Combine the mushrooms, garlic, onion mix with the shredded carrots and the pork. Add the soy sauce, egg white, and ¼ cup hoisin sauce. Mix well. The mixture can be chilled to make it firmer if you wish.
Form into balls about 1 ½ inch in diameter and place on a sheet pan or baking sheet. Bake in an oven preheated to 375˚ F for about 20 minutes.
In a sauce pan combine the pan juices, 1/4 cup hoisin sauce, and ¼ cup white wine. Reduce by about 1/3. Toss the noodles with the sauce and divide between four plates. Top each mound of noodles with meatballs. Garnish with chopped chives
