Lamb Kebab

Ingredients for 4

1 pound ground lamb

3 tsp ground cumin reserve one for the sauce

2 tsp ground coriander resreve one for the sauce

1 tablespoon minced garlic

½ tsp salt

2 tsp ground black pepper, reserve  one for the sauce.

Pita bread

1 tablespoon dried lemon zest, Reserve 1 tsp for the sauce

Other ingredients for the sauce

½ cup Greek style yoghurt

1  tablespoon finely chopped mint

1 tsp ground cayenne pepper


Combine the ingredients for the lamb with the meat and mix completely. Shape the meat into patties around each skewer. Make sure the meat patties are longer than wide and press gently around the skewer.

Grill the skewered lamb over medium high heat for about ten minutes, turning to insure even cooking.

Combine the ingredients for the sauce including the items reserved from the meat recipe.

Serve one kebab to each person, in or with pita,  and spoon sauce over or serve in small dishes.
