Grilled Smithfield Ham and Cheese with Blackberry Mustard


8 slices Italian bread

1 pound sliced Smithfield Ham

1 cup shredded semi soft Italian cheese (fontina)

3 tablespoon unsalted butter


1 cup fresh or frozen blackberries

¼ cup Dijon style mustard

 2 tblspn sugar (slightly more or less depending on the tartness of the berries)

1 tablespoon honey

1 tsp chopped fresh rosemary

1 pinch cayenne pepper

 1 tsp Balsamic vinegar

1 tsp cornstarch


Combine the blackberries, Dijon mustard, sugar, honey, rosemary, and cayenne in a small saucepan. Bring to a boil over medium heat, stirring frequently.

In a small bowl mix the cornstarch and vinegar stirring until smooth. Add the cornstarch mixture to the hot blackberry mixture, mixing well. Simmer until heated through.

Butter one side of each piece of bread. Spread blackberry mixture on one side of each of the four slices of the buttered bread. Top the blackberry side with sliced ham and shredded cheese. Top each stack with one slice of the remaining buttered bread, butter side up. Heat a skilled to medium high heat and add the sandwiches, butter side down. Cook, turning once,  until golden brown on both sides..
