25 Potato Salad April 2017

Potato Salad

2 ounces Dijon mustard

4 ounces sour cream

4 ounces Dukes Mayonnaise

1/4 cup sugar

5 pounds white potato

salt and pepper

1/4 cup cider vinegar

2 tablespoons chives, minced

2 tablespoons tarragon, minced

1 cup onion, diced

1 lb Bacon strips, cooked and crumbled

Peas fresh blanched or thawed frozen



Cook, peel, and cube the potatoes.  Season with salt and pepper and sprinkle with vinegar.


Combine remaining ingredients and add to potatoes.  Mix well but do not mash potatoes.
